Shine Bakery & Cafe is a dainty, vibrant little spot on the third floor of SM Aura. You just know a place is “kid-friendly” when the design sports candy cane stripes and its location is in front of Toy Kingdom. Parents (like me) must prepare our wallets for the double whammy!
Shine connotes #positivity and this resto’s name warms up to me instantly.
Naturellement, a family-centric place offers comfort food. But not just any chow. It’s food prepared to gourmet proportions by Chef Rob Pengson who has attained celebrity status with his growing list of restaurants: the Goose Station, Hungry Hound…to name just a few.Shine itself was listed in Esquire Magazine’s Best New Restaurants in Manila for 2013.
We were lucky that Chef Rob was heading the kitchen at the time of our visit. When in Shine, a must-order is the house bestseller Umami Fries (P233), dunked to perfection in hot oil with parmesan, sesame, nori seaweed, pimenton and a dip of Kentucky bourbon aioli.
The house serves some kickass burgers whose description in the menu is enough to make you salivate. Bacon Mushroom Fondue? Foie Gras? Jalapeno and BBQ Bacon Ranch? Oh my…am right there!
But our genial host Tara decided to let us try the Classic Cheeseburger Sliders (P288 for three pieces). It was just enough to rekindle my love for burgers again! Juicy angus beef patty heaped with onions, pickles, aioli and cheddar cheese. The good quality of the brioche bun sealed the deal.
Let’s say you arrived at the resto just as SM Aura opened for the day, about 10am, wouldn’t you like to order this irresistible-looking Corned Beef Croque Madame? (P355) I would if I could…and I did! haha.
Homemade corned beef is sandwiched in between their excellent brioche then drizzled with white truffle oil and tasty cheddar cheese sauce. Don’t forget the potato chips on the side and the sunny side up egg on top. C’était délicieux, as they say in France
But that’s not all. My favorite among the mains served that night was the Duck Confit & Waffles, a decadent treat for P888 but worth the price if only because my taste buds encountered a “eureka!” moment.Loved this French duck cooked sous vide, it was yummy enough sans its mustard maple syrup and God only knows why I ignored the waffle that came with it.
I liked Shine’s Chicken Adobo as well, the flavors seeped right to the bone. I’ve been sticking to brown rice lately and I was relieved to find that the resto served the adobo with organic multi-grain rice pilaf.
Honey-baked salmon for the pescetarian or the fish & seafood lover….
Two kinds of pasta….
Because Shine is a bakery too, their desserts whipped up by Chef Sunshine Pengson are a must-try. For instance, try the Salted Caramel Chocolate Cake. The eclairs we took home were just heavenly.
