New executive chef at Marco Polo Ortigas + signature dishes

Marco Polo Ortigas Manila – most recently awarded the coveted five-star rating by Forbes Travel Guide – introduced last month its new executive chef, Alistair Bletcher, who is a veteran of several international hotel chains. Prior to his appointment, he worked in the same position for a luxury resort and spa in Maldives.

Chef Alistair also spent a few years of his childhood in the Philippines so the country is really nothing new to him. He’s expected to infuse the familiar flavors of home while interpreting it in ways that will please even the most finicky gourmand.

The buffet in Marco Polo’s all-day dining restaurant Cucina takes on new heights as the Executive Chef introduces a couple of fresh and healthy dishes. Among these are the Baked Fillet of Garoupa with Mushrooms, Tomatoes and Lemon Herb Crust on Buttered Leaf Spinach and Grain Mustard Dry Vermouth Cream.

Diners will also get to taste the exquisite Crispy Skin Duck Confit on Braised Red Cabbage with Caraway Seeds and Piquant Orange Sauce. There’s also the creamy Leek, Potato, and Gruyere Cheese Cannelloni on Porcini Cream Sauce to savor.
