I missed Chef Seiji Kamura's class on how to make Japanese-style ramen at The Maya Kitchen as announced here. But thankfully, I was able to get hold of the recipes he taught in the class so am sharing them here. Disclosure: the ramen recipes haven't been tested by me yet (but I will, one of these days). Ramen Yushoken: love at first shoyu
I've said somewhere in this blog that am not crazy about ramen, so I didn't really line up at every new ramen resto that Manilans obsessed with . Maybe because one of my first major encounters with the Japanese noodle soup didn't end on an impressive note (sorry Ukkokei Ramen Ron fans). Secondly, am not the kind of person who goes for soups.
